Banana Pancakes

This was bfast this morning! My hubby LOVED them!
* Makes 8-10 pancakes 
Ingredients: 
Flax Meal
1/4 cup Unsweetened coconut flakes
6 whole eggs 2 egg whites
1 tbsp coconut oil
banana 
cinnamon 
Liquid Vanilla Stevia (or you can use pure vanilla- or even just omit) 
100% maple syrup

Directions: 
*Heat your pan or pancake griddle ( I use a griddle around 300 degrees)
In a bowl mix eggs, 1/4 cup coconut flakes, 1/2 of a mashed up banana, 1/2 dropped liquid stevia.
In a separate small bowl or cup melt the coconut oil in the micro, then pour into the mix. 
Then, slowly add in flax meal, mixing as you add it. Get the batter to a consistency that you like.  If you accidently add too much and it turns out thick, just add in a little water. 
Next add in the cinnamon, as much as you like! 

Pour on pan, cook a few minutes on each side.
Once all pancakes are made, slice up the remaining 1/2 banana and top the pancakes with them plus a small amount of 100% maple syrup.

    Got to say that I am a massive fan, I have been wanting to try one of your recipes for awhile and these look too good to miss. Although I'm having some trouble finding coconut flakes in the UK, the closest I can find is either the stuff or something called dissected coconut which doesn't really have any other ingredients.

    Could you please give me some help on what I should be looking for?

  2. coconut flakes is just shredded coconut, its usually in the baking isle, although its a little harder to find it unsweetened. I hope you find some! If not you can just use almond flour, or more flax.
