Pumpkin Muffins

Preheat oven to 350

Ingredients: 
5 eggs
1/2 cup 100% maple syrup 
1/4 cup coconut crystals 
1/2 cup olive oil
1/2 cup coconut oil (in its liquid form) 
15 ounce can of pure pumpkin 
3 tsp cinnamon 
1 cup coconut flour
1/2 cup flax meal 

Directions:
Place eggs, maple syrup, coconut crystals, pumpkin and oils into a blender- if you have a kitchen aid--PERFECT! If not, place into a bowl and use a hand mixer. Mix very well! 
Then slowly add in the coconut flour and flax meal. Lastly add in the cinnamon. 

Grease your muffin pan well- I used olive oil. Fill up each muffin space 3/4 the way full of the batter- the batter is a somewhat thick consistency, its not runny.  Place into the oven and cook 20-25 min. (I went with 25, but checked it at 20).

These are PERFECT without icing on top. But if you have a crazy sweet tooth you can make this: 

"Brown Sugar" Icing 

Ingredients: 
8 oz coconut milk
1/2 cup coconut oil
1 tsp pure vanilla
1 cup coconut crystals 

Directions: 
Put all ingredients into your mixer and let mix 3-4 minutes. You will be putting the coconut oil into the mix in its solid form. 
If the coconut oil doesn't mix all the way and you see a few lumps, you can stick it into a bowl and put it in the micro for 10-20 seconds. Mix well. Then stick in the refrigerator to thicken. It will not be as thick as real icing, but it works! It tastes like brown sugar to me ;)

  2. I must have done something worng because they would not could all the way through, even after 40 min they still wouldnt. dang it

  3. coconut crystals are a sugar alternative coming from the coconut. Not sure the nutritional value.
    Thats weird-- I am not sure what to tell you on that way, I would say cook longer but 40 is a while.
