Creme Brulee

Ingredients:

5 egg yolks

2c. coconut milk

5 truvia packets

1 tsp. vanilla

Directions:

Preheat over to 300 degrees. Whisk the coconut milk, egg yolks, vanilla, and 4 packets of truvia together in a bowl. Mix it up until it is nice and creamy. Pour the mixture into ramekins. I had it evenly distributed between 4 ouncers. Place the ramekins in a baking pan. Fill the baking pan with hot water, about halfway up the sides of the ramekins. Place the pan with the ramekins in the over for 1 hour. continue to check them every 10 minutes until they are done. You will know they are done when you can stick a knife into one and it comes out clean. Remove the ramekins from the baking pan, and let them sit for 15 minutes or so.

Put them in the refrigerator and let them chill overnight.

Set your oven rack to the highest possible shelve. Set your oven to broil. Sprinkle a thin layer of truvia over the top (1 packet is sufficient for all 4 of them). Set them in the oven on the top rack for 1 MINUTE. This will allow them to brown and the truvia to melt.

  2. What is a substitute for Truvia. This is no longer a Paleo dish upon adding truvia, right?

  4. Yes, You are correct! Truvia is far from being Paleo. Stay far away if you want to be 100% Paleo. Shoot for Honey, dates or bananas instead.

  5. I used raw coconut crystals instead of Truvia.

  6. You have to use some kind of sugar to get the carmalization and slighty crunchy top you get with regular creme brulee. Stevia (Truvia is from the Stevia leaf) is okay for the Primal Diet if that makes you all feel any better - http://www.marksdailyapple.com/stevia/#axzz254DxvdXK
