Stuffed Portabellas


These are good if you are eating paleo or not. This is also the lazy man's way of making this dish..... you can always make your own sausage and marinara. (but who has time for that?) This serves 6 people.

Ingredients:

6 large portabellas

1.5 lbs of uncased Italian sausage (make sure it is paleo... a lot of the store bought stuff had sugar in it... BIG NO NO)

1 jar or can of Marinara Sauce (again! make sure it is paleo... NO SUGAR!)

crushed red pepper (optional)

oregano (optional)

0live oil

Directions:

Preheat oven to 350. Wash and remove stems from the portabellas. Dry them with a paper towel. Lightly brush the portabellas with olive oil and place on a greased pan and allow them to begin to cook while you make the sausage. Brown and season the sausage on a skillet. When sausage is done add enough marinara to coat the sausage completely. Remove portabellas and spoon sausage into them. Return to oven until the mushrooms are completely cooked.

Done! These are easy and we eat them ALL the time.
