Fish Tacos

Ingredients: 
1 lb tilapia thawed 
1 tomato
1 cup shredded lettuce or cabbage (I used lettuce)
Mrs. Dash Fiesta Lime
Sea Salt
coconut oil 
dried cilantro
organic creamed coconut 

Guac: 
avacado 
garlic
onion powder
lime juice 

Sauce: 
Organic creamed coconut 
Dried cilantro 
Mrs Dash fiesta lime
sea salt 

Directions: 
Make 6 tortillas (so you will need to triple the tortilla recipe). 

Then make the guac by smashing up one avocado in a small bowl.  Add in 1/2 tsp of finely chopped garlic (you can do more if you LOVE garlic), slowly add in onion powder to your liking. Add in the lime juice 1/2 tsp at a time until its at a desired taste! 

On to the fish!
Make sure it is thawed. Cut fish into small pieces and place into pan with approx 2 tbsp coconut oil (already melted)- you may need 3 tbsp, just make sure the oil is covering a majority of the pan. Pan should be on/around medium heat (a little over).
Load the fish with Mrs Dash fiesta lime and sprinkle sea salt. The fish should cook very quickly! 
Taste test a piece and if you want more seasonings go for! Its up to you and your taste buds! 

Sauce: 
Follow the directions on the box for the creamed coconut. Pour about 1/4 cup into a small bowl. Mix in dried cilantro,fiest lime mrs dash, lime juice and sea salt--a little at a time, mix and taste test. Keep adding until your desired flavor. 

Scoop some fish onto your tortilla, add chopped tomatoes, lettuce, gauc and sauce........ENJOY!!!!!

Makes 6 Fish Tacos!
