Quick Homemade Chicken Noodle Soup
This recipe is dedicated to the loving memory of my Aunt Ann Marie Guffy.
March 13, 1975- Aug. 2, 2001
(I made some slight adjustments to her recipe to make it paleo-friendly.)
4-5c. All natural chicken broth
2-3 good sized chicken breast, raw and cut into small cubes.
1 tsp. Thyme
2 tbsp. fresh, finely chopped Basil
1 tsp. Rosemary
2 Bay leaves
1-1 1/2c cooked spaghetti squash
Bring broth to boiling, and add chicken. Add all spices. (My measurements are estimates, season your soup to taste). Let it simmer for about 10 minutes and add spaghetti squash. Cook on medium low setting for an additional 10 minutes and Enjoy!
