Breakfast Burritos


This serves 2 people.

2 LARGE TORTILLAS-

Ingredients:

2 tablespoon coconut flour

4 egg whites (set aside the yolks for later)

4 tablespoons water

olive oil


Directions:

(Use your best non-stick pan and a rubber spatula)

Mix the coconut flour, water, and egg whites. Whisk until all lumps disappear.

Heat a pan and grease with olive oil.

Pour 1/2 batter in center of pan. Tilt the pan around to spread the batter into a large circle, until it is large enough to be a tortilla.

Cover for around 30 seconds or until the underside is brown and then flip and cover for another 30 seconds. (repeat this with the rest of the batter)

Lay them out on a plate.

FILLING-

Ingredients-

Left over yolks from the tortillas

2 large eggs

1/2 green pepper

1/2c mushrooms

2c sausage or chorizo

1/4c onion

dash of red pepper

Directions:

Cook and saute pepper, mushrooms, onion, and sausage. Add yolks+eggs and scramble. Season to your loving! Fill and wrap your tortilla.

***This is what I did this morning.... I would just add whatever you have in the fridge that sounds good.... spinach, tomatoes, chicken, turkey.... GO FOR IT.

  2. Coconut flour? Where do you find that in your local market? Would whole-wheat flour work?
