Nut Encrusted Cod

Ingredients: 
1/2 cup chopped almonds (I used slap chop)
1/2 cup flax meal
1/2 cup chopped walnuts
1 1/2 tsp garlic powder
1 tsp onion powder
1 1/2 tsp Mrs Dash Italian Medley 
3 eggs 
Pepper
Sea Salt
Olive Oil 
1 lb Cod cut into 3-4 sections 

Directions: 
Place oven rack to the second from the bottom
Preheat oven to 475

In a shallow bowl beat the three eggs together.

In a separate bowl mix: 
all of the nut/flax/and all seasonings. 
For the pepper and the sea salt I used 15 turns on the grinder. 

Place a cooking pan on the stove on medium heat with 2 tbsp olive oil. 

Dip the cod into the nut mixture to coat both sides. Then dip into the egg mixture. Then dip back into the nut mixture so it is fully covered then place onto the pan. Do this to all 3-4 pieces. 
Let sit for 3-4 minutes. Flip to the other side, add 2 more tbsp olive oil and cook another 3-4 minutes. 

Carefully move the fish with a spatula to a cooking dish and place into the oven. Cook 5-10 min, depending on how thick your cod is. I took mine out at 5 and had to put back in for another 5. 

I enjoyed mine with a side of asparagus, it was delicious!
