Preheat oven to 350
Grease up some souffle dishes (I used a muffin pan) with coconut oil.
Chop up a couple of apples and put in bottom (of each muffin dish) . Sprinkle with cinnamon.
In bowl mix together:
1 whole egg ( I used two whole eggs)
4 egg whites
1 tbsp cinnamon
1/3 cup blueberries ( I used 1/2 cup)
1/3 cup sliced strawberries ( I used 1/2 cup)
1/4 cup coconut flour ( I used 1/4 cup egg white protein powder- unflavored)
1 cup chopped almonds, walnuts, cashews: Just put some nuts in a Slap Chop-Not flour consistency, but crunchy small pieces. ( I used walnuts and almonds only)
1/4 cup Udi's Gluten Free Wheat Free Granola ( I used 1/4 cup flaxseed meal)
2 tbsp Unsweetened Coconut Milk ( I used 1 tbsp olive oil and 1 tbsp almond milk)
I filled up muffin pan so that each once was almost to the top, then I used one packet of truvia and lightly sprinkled the top of each one before putting into the oven.
Bake for 20-30 minutes. ( I cooked for 30 minutes)
Why would you ruin this perfectly delicious sounding recipe by adding something so synthetic and unnatural as Truvia ?

ReplyDeleteTruvia is made from the stevia plant. Yes, it does go through a process to get into its sugar like form. But its much better than Splenda and Equal that are completely artificial.

Thanks for posting so many yummy breakfast ideas! Thats the one meal I have a hard time finding different things to eat. You can only eat so many eggs before they start getting boring!!!!
