Berry Ice Cream
Ingredients:
1 can coconut milk (regular not lite)
1 tbsp lemon juice
4 packets of truvia
6 drops of liquid vanilla stevia (you can sub this with a cap full of pure vanilla)
1/2 cup blended strawberries and blueberries (blend in blender or food processor)
Directions:
Mix all ingredients together and add into your ice cream maker.
If you do not have an ice cream maker you can probably just add it all to your blender, if you use frozen berries it will make a tasty thick shake almost like ice cream ;)
My ice cream maker only takes 20 minutes so I usually put it all in while we eat dinner so its ready when we finish ;)
Top each serving with 2-3 sliced strawberries and a small handful of blueberries.

When you call for coconut milk, do you use the can or the one you get by the regular milk?
ReplyDeletethe can. the ones in the carton have too many ingredients, a lot of which are artificial or not great for u. usually the can is just coconut milk and sometimes guar gum, its best to find just the coconut milk though.
