Lemon Blueberry Pancakes

Makes about 10 regular sized pancakes

Ingredients: 
4 whole eggs
6 egg whites
3/4 cup almond meal
1/2 cup coconut flour
1 tbsp olive oil
1 tbsp creamed honey
1 1/4 tsp lemon extract
1 tbsp coconut crystals
1 cup blueberries (frozen or fresh- I used frozen)
3 tbsp water

Directions: 
Mix all of the above ingredients into a mixing bowl until well blended. Let sit about 5 minutes before pouring any onto the pan so that it will thicken.
Set the pan to med or medium low depending on your stove top. If you have a non-stick pan there is no need to grease the pan, however a small amount of olive oil works well. PAM is NOT paleo.
Cook just like a regular pancakes, couple minutes on each side. Watch well so that you do not burn!

"Syrup" 
1 1/2 cup blueberries (frozen) microwaved for 2 minutes. Juice will form in the bottom of the bowl.
Place in a mixer with 2 packets of truvia and blend for a couple of minutes. Pour on top of pancakes and enjoy!
Sometimes I just pour the blueberries on my pancakes right out of the micro, you do not have to mix them if you don't want to ;)
