This recipe is just for the rice.
You can make the fish by following this recipe: Curry Tilapia
Makes 2 servings.
Ingredients:
3 tbsp Coconut Oil (solid form)
1/2 cup unsweetened coconut flakes
1/2 head of cauliflower
1/2 tsp garlic powder
*sea salt optional- just a sprinkle
Directions:
Heat a frying pan on your stove top to medium heat.
Add in 3 tbsp ( I used actual silverware, a cereal sized spoon) coconut oil and let melt.
Spread it evenly on pan.
Using 1/2 of a head of cauliflower, take off the florets and chop in a slap chopper- as fine as rice.
Put it into the warmed up/oiled pan.
Add in the 1/2 cup of the coconut flakes and the garlic powder.
Turn heat up to med-high and fry mixing constantly until the "rice" begins to brown.
Other options:
Adding in 1/4 cup of finely chopped almonds ( I used my slap chop). Its amazing with the almonds, but also with out.
You could also add in 1/4 cup chopped pineapple, I haven't tried this but it sounds like it could be tasty!
I topped mine with my curry sauce, you can find that in the Curry Tilapia recipe .

ReplyDeleteI havent had tilapia in years because of its "fishy/dirty" taste.
I bought it to give it another shot and wow! I am pretty sure the cooking in coconut oil is what makes it so much better! And the rice, well....its like heaven!
Thank you for this recipe! My family loved it! I served it with salmon. I think tilapia would have been better, but salmon is what I had.
