3 large boneless skinless chicken breast halves<br />
1 pound smoked sausage, cut into 1/4-inch slices (I bought Chicken sausage from Whole Foods. Read Labels!)<br />
7 tablespoons olive oil1 large onion, chopped<br />
5 cloves garlic minced<br />
1/2 green bell pepper, seeded and chopped<br />
1/2 red bell pepper, seeded and chopped<br />
3 stalks celery chopped1/4 bunch flat leaf parsley, stems and leaves, coarsely chopped, plus chopped leaves for garnish<br />
4 cups beef stock (read labels! or make your own)<br />
4 roma tomatoes, diced<br />
2 cups frozen sliced okra<br />
4 green onions, sliced, white and green parts<br />
1/2 pound small shrimp, peeled, deveined and cooked<br />
3 tsp. Paprika<br />
1 tsp. Cumin<br />
1 pinch black pepper<br />
1 tsp. Cayenne pepper<br />
1 tsp. Rosemary<br />
1 tsp. thyme<br />
2 tbsp. apple cider vinegar (optional)<br />
1 tbsp. anchovy paste (optional)<br />
sea salt to taste<br />
<br />
<strong>Directions:</strong><br />
Heat 2 tbsp oil in a pan over medium-high heat.<br />
Cook the chicken until browned on both sides and remove.<br />
Add the sausage and cook until browned, then remove.<br />
In a large pan heat the remaining oil and add the onion, garlic, green pepper, red pepper and celery and cook for 10 minutes.<br />
Add beef broth and parsley, all spices, vinegar, and anchovy paste.<br />
Add the chicken and sausage to the large pan.<br />
Bring to a boil, then reduce the heat, cover, and simmer for 20 minutes.<br />
Add tomatoes and okra.<br />
Cover and simmer for 1 hour.<br />
Just before serving add the green onions, shrimp and more chopped parsley.<br />

On a greased (coconut oil) cookie sheet. Place rounded spoonfuls of the mixture about 1 inch away from each other, press the spoonfuls down into a small circular cookie shape.<br />

When sausage is done add enough marinara to coat the sausage completely. Spoon this sausage and mushroom combination into the bell pepper casings. 3 tbsp Coconut Oil (solid form)<br />
1/2 cup unsweetened coconut flakes<br />
1/2 head of cauliflower<br />
1/2 tsp garlic powder<br />
*sea salt optional- just a sprinkle<br />

<b>Directions: </b><br />
Heat a frying pan on your stove top to medium heat.<br />
Add in 3 tbsp ( I used actual silverware, a cereal sized spoon) coconut oil and let melt.<br />
Spread it evenly on pan.<br />
Using 1/2 of a head of cauliflower, take off the florets and chop in a slap chopper- as fine as rice.<br />
Put it into the warmed up/oiled pan.<br />
Add in the 1/2 cup of the coconut flakes and the garlic powder.<br />
Turn heat up to med-high and fry mixing constantly until the "rice" begins to brown.<br />
<br />
<i>Other options: </i><br />
Adding in 1/4 cup of finely chopped almonds ( I used my slap chop). Its amazing with the almonds, but also with out.<br />
You could also add in 1/4 cup chopped pineapple, I haven't tried this but it sounds like it could be tasty!<br />

You can also add in a small amount of garlic powder. Add in just enough of the sweetener to give it a little sweet taste, nothing crazy!<br />
Heat up and lightly boil for 1-2 minutes. Then take off the burner and let cool. It should thicken up slightly. </div><div class="mobile-photo"><br />
</div><div class="mobile-photo"><i>For the fish: </i></div><div class="mobile-photo">Make sure its thawed if you buy frozen. </div><div class="mobile-photo">Put 1 tbsp coconut oil (I used the solid) in a frying pan and heat up on medium heat. Place 1-3 pieces of tilapia in the pan and sprinkle generously on top pepper and garlic powder. </div><div class="mobile-photo">Cook a couple of min, until the bottom begins to turn white. Flip, and cover the other side generously with garlic powder and pepper. Make sure there is still coconut oil in the pan when you flip the fish over, if not then add in a little more! Cook until white all the way through.<br />
Put fish on your plate and top with the curry mixture! </div><div class="mobile-photo"><br />
